Before we sip, Irene takes us on a stroll through the vineyard. She talks about grape varieties, weather woes, and the eternal battle against plant diseases. But the real jaw-dropper? Roberto’s story. Once a chemist, he ditched the lab coat for muddy boots and became a biological winemaker. His wife wasn’t thrilled at first.

After the vineyard, our next stop is the cellar—with the big barrels, cool air, and that magical smell of wine becoming wine. Then, the tasting begins. Glasses clink. Bottles pop. And the table?
